To check something out means to try it (in the case of an activity), go there (in the case of a place), experience something, or learn more information about it.
Some examples:
"You should check out the new Indian restaurant. It's really good!" = You should go try the new Indian restaurant.
A: "Do you like John McLaughlin? He's my favorite guitarist."
B: "No, I've never heard of him before. I'll have to check him out." = I'll try listening to his music.
"There's a new art exhibition in Ueno I'd like to see. Let's go check it out!" = Let's go and see the exhibition.
